Description

Indulge in these quick and easy brownie mix cookies, combining the fudginess of brownies with the satisfying texture of cookies.

Ingredients

  • 1 (18.3 oz) box fudgy brownie mix
  • 2 large eggs
  • 1/2 cup (113 grams) unsalted butter, melted
  • 1/4 cup (32 grams) all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup dark chocolate chips
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon espresso powder (optional)
  • 1/2 cup (85 grams) dark chocolate, chopped (for drizzle)
  • 1 tablespoon unsalted butter (for drizzle)
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two baking sheets with parchment paper or silicone mats.
  2. Melt the unsalted butter in a large mixing bowl until just liquid.
  3. Add in the eggs, vanilla extract, and optional espresso powder. Whisk until well blended and slightly frothy.
  4. Gradually mix in the brownie mix, all-purpose flour, and a pinch of salt until just combined.
  5. Fold in both types of chocolate chips into the dough, ensuring even distribution.
  6. Scoop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  7. Bake for 9-11 minutes, until the edges are firm but the centers remain soft.
  8. Let cool on the sheets for 5-10 minutes before transferring to a wire rack.
  9. In a microwave-safe bowl, combine chopped dark chocolate and unsalted butter. Melt in 30-second intervals, stirring until smooth to prepare the drizzle.
  10. Drizzle the warm chocolate over each cookie and sprinkle with flaky sea salt. Let set for about 15-20 minutes.

Notes

Serve slightly warm with a scoop of vanilla ice cream or milk. Store in an airtight container at room temperature for up to one week.
