Ingredients
- 1 box brownie mix (18-20 oz.)
- ⅓ cup flour (40 grams)
- 1 oz. cream cheese (softened)
- 1 ½ tsp espresso powder
- ½ cup butter (melted)
- 2 large eggs
- Flaky sea salt (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the brownie mix and flour. Stir well to blend.
- Add the softened cream cheese, melted butter, and eggs to the dry ingredients. Mix until just combined; do not overmix.
- Gently fold in the espresso powder for an enhanced chocolate flavor.
- Use a cookie scoop to portion the dough onto the prepared baking sheet, leaving space between each cookie.
- Sprinkle a pinch of flaky sea salt on top of each cookie for an extra flavor boost.
- Bake for about 10-12 minutes, or until the tops are set but not overcooked.
- Cool for a few minutes on the baking sheet, then transfer to a wire rack to cool completely.
Notes
For thicker cookies, chill the dough for about 30 minutes before baking. Feel free to add chocolate chips, nuts, or dried fruits for texture.
