Description

Rich, fudgy cookies made with brownie mix for an easy and indulgent dessert.


Ingredients

  • 1 box brownie mix (18-20 oz.)
  • ⅓ cup flour (40 grams)
  • 1 oz. cream cheese (softened)
  • 1 ½ tsp espresso powder
  • ½ cup butter (melted)
  • 2 large eggs
  • Flaky sea salt (optional, for topping)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the brownie mix and flour. Stir well to blend.
  3. Add the softened cream cheese, melted butter, and eggs to the dry ingredients. Mix until just combined; do not overmix.
  4. Gently fold in the espresso powder for an enhanced chocolate flavor.
  5. Use a cookie scoop to portion the dough onto the prepared baking sheet, leaving space between each cookie.
  6. Sprinkle a pinch of flaky sea salt on top of each cookie for an extra flavor boost.
  7. Bake for about 10-12 minutes, or until the tops are set but not overcooked.
  8. Cool for a few minutes on the baking sheet, then transfer to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for about 30 minutes before baking. Feel free to add chocolate chips, nuts, or dried fruits for texture.
