Description

Indulge in the unique combination of a brownie and a cookie with these soft and chewy Brownie Cookies, perfect for sharing or as a sweet treat after a long day.

Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the brown sugar, granulated sugar, and melted butter. Mix until well blended.
  3. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  5. Fold in the chocolate chips gently to avoid breaking them.
  6. Drop spoonfuls of the cookie dough onto the prepared baking sheet, leaving about 2 inches between each spoonful.
  7. Bake for 10-12 minutes, until the edges are set but the centers remain slightly soft.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, chill the dough for 30 minutes before baking. Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
