Description

A delicious cross between brownie and cookie, these brownie cookies are rich, chewy, and perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups brown sugar
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and prep a baking sheet by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk together until smooth.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
  5. Gradually combine the dry ingredients with the wet mixture, mixing until just combined. Fold in chocolate chips if desired.
  6. Drop tablespoons of batter onto the prepared baking sheet, leaving about 2 inches between cookies.
  7. Bake for 10-12 minutes, until edges are set but centers remain soft. Cool slightly before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to one week. Freeze individually wrapped cookies for up to three months.
