A delicious cross between brownie and cookie, these brownie cookies are rich, chewy, and perfect for any occasion.
Ingredients
- 1 cup unsalted butter, melted
- 2 cups brown sugar
- 3/4 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prep a baking sheet by greasing it or lining it with parchment paper.
- In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk together until smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
- Gradually combine the dry ingredients with the wet mixture, mixing until just combined. Fold in chocolate chips if desired.
- Drop tablespoons of batter onto the prepared baking sheet, leaving about 2 inches between cookies.
- Bake for 10-12 minutes, until edges are set but centers remain soft. Cool slightly before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for up to one week. Freeze individually wrapped cookies for up to three months.
