Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup milk
  • 1 cup powdered sugar (for glazing)
  • 1-2 tablespoons milk (for glazing)
  • 1/2 teaspoon ground cinnamon (for glazing)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the flour, baking powder, salt, and cinnamon in a separate bowl. Gradually add the dry ingredients to the creamed mixture, combining until a soft dough forms.
  5. Roll out the dough on a lightly floured surface and cut it into rectangles, about 2×3 inches each.
  6. Place half of the rectangles on a baking sheet lined with parchment paper.
  7. Mix the filling ingredients in a small bowl and spoon a small amount onto each rectangle.
  8. Top with the remaining rectangles, pressing the edges firmly to seal.
  9. Bake in the preheated oven for 12-15 minutes or until golden brown.
  10. Whisk the powdered sugar, milk, and cinnamon together for the glaze until smooth.
  11. Cool the cookies slightly, then drizzle the glaze over them.
