Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 cup milk
- 1 cup powdered sugar (for glazing)
- 1-2 tablespoons milk (for glazing)
- 1/2 teaspoon ground cinnamon (for glazing)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Whisk together the flour, baking powder, salt, and cinnamon in a separate bowl. Gradually add the dry ingredients to the creamed mixture, combining until a soft dough forms.
- Roll out the dough on a lightly floured surface and cut it into rectangles, about 2×3 inches each.
- Place half of the rectangles on a baking sheet lined with parchment paper.
- Mix the filling ingredients in a small bowl and spoon a small amount onto each rectangle.
- Top with the remaining rectangles, pressing the edges firmly to seal.
- Bake in the preheated oven for 12-15 minutes or until golden brown.
- Whisk the powdered sugar, milk, and cinnamon together for the glaze until smooth.
- Cool the cookies slightly, then drizzle the glaze over them.
Notes
Chill the dough if it becomes too soft. Experiment with different fillings for variety.
