Ingredients
- 2 lbs (907 g) baby carrots
- 2 tablespoons light brown sugar (packed)
- 2 tablespoons pure honey
- 4 tablespoons unsalted butter
- 1 tablespoon freshly chopped dill
- 500 ml water
- Salt (to taste)
- Black pepper (to taste)
Instructions
- In a large skillet, add the carrots, water, and a pinch of salt. Heat over medium-high until the water starts to simmer. Allow it to evaporate as the carrots soften.
- Once the water has disappeared, add the butter, honey, and brown sugar. Stir continuously for about 5 minutes, letting the mixture thicken into a glossy glaze that evenly coats the carrots.
- Taste your glaze! Adjust seasoning with more salt and black pepper to your liking. Finally, gently mix in the fresh dill to enhance the flavors and add a bright touch.
Notes
Use freshly sourced carrots for the best flavor and texture. For a vegan version, substitute butter with coconut oil and use maple syrup instead of honey.
