Ingredients

  • 2 tablespoons light brown sugar (packed)
  • 2 tablespoons pure honey
  • 4 tablespoons unsalted butter
  • 1 tablespoon freshly chopped dill
  • 500 ml water
  • Salt (to taste)
  • Black pepper (to taste)


Instructions

  1. In a large skillet, add the carrots, water, and a pinch of salt. Heat over medium-high until the water starts to simmer. Allow it to evaporate as the carrots soften.
  2. Once the water has disappeared, add the butter, honey, and brown sugar. Stir continuously for about 5 minutes, letting the mixture thicken into a glossy glaze that evenly coats the carrots.
  3. Taste your glaze! Adjust seasoning with more salt and black pepper to your liking. Finally, gently mix in the fresh dill to enhance the flavors and add a bright touch.

Notes

Use freshly sourced carrots for the best flavor and texture. For a vegan version, substitute butter with coconut oil and use maple syrup instead of honey.
