Description

A delicious and vibrant broccoli salad with crispy bacon, sweet-tart cranberries, and a creamy dressing, perfect for gatherings and family dinners.

Ingredients

  • 720g fresh broccoli florets, chopped small
  • 50g red onion, finely diced
  • 70g dried cranberries (or half raisins for sweetness)
  • 35g sunflower seeds, toasted
  • 75g cooked bacon bits
  • 240g mayonnaise
  • 45ml apple cider vinegar
  • 25g sugar (or less, to taste)
  • Salt & black pepper to taste

Instructions

  1. In a dry skillet, toast the sunflower seeds over medium heat for about 2–3 minutes until they turn golden brown.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until well combined.
  3. In a large mixing bowl, combine the chopped broccoli, diced red onion, cranberries, sunflower seeds, and cooked bacon bits.
  4. Pour the dressing over the salad mixture and toss thoroughly until everything is evenly coated.
  5. Chill for at least 1 hour before serving, allowing the flavors to meld beautifully. Stir again before serving for an even mix.

Notes

Feel free to substitute raisins for cranberries or use Greek yogurt instead of mayonnaise for a lighter option.
