Description

A nutrient-packed and delicious Broccoli Salad with a blend of creamy dressing and crunchy toppings.


Ingredients

  • 6 cups fresh broccoli florets (cut into bite-sized pieces)
  • 8 slices bacon (cooked and crumbled)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup red onion (finely chopped)
  • 1/2 cup dried cranberries
  • 1/4 cup roasted salted sunflower seeds
  • 1 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 3 tbsp granulated sugar


Instructions

  1. Cook bacon in a large skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain and cool.
  2. While the bacon is cooking, wash and dry the broccoli, cutting into small florets.
  3. Finely chop the red onion.
  4. In a small bowl, whisk together mayonnaise, apple cider vinegar, and sugar until smooth.
  5. In a large mixing bowl, combine broccoli florets, crumbled bacon, cheddar cheese, red onion, cranberries, and sunflower seeds.
  6. Pour the dressing over the mixture and toss gently to coat. Chill for at least 30 minutes before serving.

Notes

For a lighter dressing, try using Greek yogurt instead of mayonnaise.
