Description

A fresh and flavorful broccoli salad with bacon, cranberries, and a creamy yogurt dressing, perfect for summer gatherings.


Ingredients

  • 4 cups broccoli florets, chopped
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup red onion, diced
  • 1/2 cup dried cranberries
  • 1/2 cup sunflower seeds
  • 1/2 cup goat cheese, crumbled
  • 1/2 cup mayonnaise
  • 1/2 cup plain yogurt
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the chopped broccoli florets, crumbled bacon, diced red onion, dried cranberries, sunflower seeds, and goat cheese.
  2. In a separate small bowl, whisk together the mayonnaise, yogurt, apple cider vinegar, salt, and pepper until well blended.
  3. Pour the dressing over the salad mixture and toss to coat evenly.
  4. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld beautifully.

Notes

For a vegetarian version, skip the bacon and substitute walnuts for sunflower seeds.
