Ingredients
- 1 head of broccoli (tops only)
- 1 head of cauliflower (tops only)
- 8 slices well-cooked and chopped bacon
- 1 cup red onion (diced)
- 1 cup shredded cheddar cheese
- 1/2 cup salted and roasted sunflower seeds
- 1/2 cup raisins
- 1 cup mayonnaise
- 2 tablespoons fresh lemon juice (or apple cider vinegar)
- 2 tablespoons sweetener (like granulated sugar or honey)
Instructions
- In a small bowl, mix the mayonnaise, lemon juice, and sweetener to create the dressing. Set aside.
- In a large bowl, combine the broccoli, cauliflower, bacon, red onion, cheddar cheese, sunflower seeds, and raisins.
- Pour the dressing over the salad mixture and toss gently to combine thoroughly.
- Chill in the refrigerator for at least 1 hour before serving. Enjoy!
Notes
