A refreshing, vibrant salad combining broccoli, cauliflower, and a zesty dressing for perfect pairings at any meal.
Ingredients
- 2 cups fresh broccoli florets
- 2 cups fresh cauliflower florets
- 1 cup grapes, halved (green or red)
- 1 cup shredded carrots
- ½ cup red onion, finely chopped
- ½ cup sunflower seeds or chopped nuts (optional)
- ¾ cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon sugar or honey (to taste)
- Salt and pepper to taste
Instructions
- Prepare the Vegetables: Rinse the broccoli and cauliflower florets thoroughly. Chop them into small, bite-sized pieces.
- Mix Dressing: In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar or honey, salt, and pepper until smooth.
- Combine: In a large bowl, toss the chopped broccoli, cauliflower, grapes, carrots, and red onion. Pour the dressing over the salad and mix thoroughly until all vegetables are coated.
- Chill: Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
- Serve: Just before serving, sprinkle sunflower seeds or nuts on top for added crunch.
Notes
For a healthier twist, swap mayo for Greek yogurt and customize with additional veggies.
