Description

A creamy and colorful bowl filled with avocado rice, vibrant vegetables, and crispy salmon, perfect for any meal.


Ingredients

  • 1 cup short grain or sushi rice
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 1 cup assorted vegetables (bell peppers, carrots, snap peas)
  • 2 salmon fillets
  • Salt and pepper to taste
  • Optional toppings: sesame seeds, chopped green onions, pickled ginger


Instructions

  1. Cook the rice: Rinse and cook the rice according to package instructions. Once done, let it cool slightly.
  2. Prepare the avocado: Mash the avocado in a bowl with lime juice, salt, and pepper until creamy.
  3. Cook the salmon: Season the salmon fillets with salt and pepper. Either grill or bake them at 400°F (200°C) for 12-15 minutes, until cooked through.
  4. Sauté the vegetables: In a pan, lightly sauté the vegetables in a bit of oil until they are bright in color and tender-crisp.
  5. Assemble your bowl: Start with a base of avocado rice, layer on the sautéed vegetables, and top it with the crispy salmon filet.

Notes

For a beautiful presentation, use a wide bowl and drizzle with lime juice and sprinkle sesame seeds for extra flavor. Leftovers can be stored separately in airtight containers for up to 3 days.
