Description

Indulge in soft and fluffy Blueberry Cake Donuts that are perfect for any occasion, bursting with sweet blueberry flavor.

Ingredients

  • 3 Tablespoons (42 grams) butter, melted
  • 2/3 cup (132 grams) granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 2/3 cup (160 grams) sour cream
  • 3 1/4 cups (370 grams) cake flour or 315 grams all-purpose flour + 55 grams cornstarch
  • 2 1/4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup (80 grams) dried blueberries
  • 1/2 cup milk
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract or vanilla bean paste for glazing

Instructions

  1. Mix the Batter: In a mixing bowl, combine the melted butter and granulated sugar, whisking until creamy. Add the egg yolks and vanilla, mixing well. Fold in the sour cream until just combined.
  2. Combine Dry Ingredients: In a separate bowl, sift together the cake flour (or all-purpose flour with cornstarch), baking powder, and salt. Gradually add this to the wet mixture, stirring until just combined.
  3. Incorporate Blueberries: Gently fold in the dried blueberries, ensuring they are evenly distributed throughout the batter.
  4. Shape the Donuts: Preheat your oven to 350°F (175°C) if baking. Spoon the batter into a greased donut pan or pipe it into shapes on parchment paper if frying.
  5. Cook: Bake for 10-12 minutes or until golden. If frying, heat oil to 375°F (190°C) and fry for about 2-3 minutes per side until golden brown.
  6. Glaze: While the donuts cool, whisk together powdered sugar and vanilla extract with enough milk to create a smooth glaze. Dip the donuts into the glaze and allow to set.
  7. Serve: Enjoy the donuts warm or at room temperature!

Notes

For maximum flavor, let the melted butter cool slightly before adding it to the sugar mixture. Make sure not to overmix the batter to keep your donuts tender and light.
