Description
Crispy, cheese-packed quesadillas filled with diced chicken cooked in BBQ sauce and hot honey.
Ingredients
- Cooking oil of choice
- 1 lb boneless, skinless chicken thighs (or chicken breasts)
- Kosher salt, to taste
- Pepper, to taste
- BBQ seasoning blend, to taste
- 3 tbsp BBQ sauce (plus more for drizzling)
- 2 tbsp hot honey (plus more for drizzling)
- 4 large burrito-size flour tortillas
- 3 cups shredded cheese of choice
- 1/2 cup chopped cilantro (optional)
- Optional toppings: sour cream, jalapeños
Instructions
- Preheat griddle to medium; add oil, chicken, salt, pepper, and BBQ seasoning, then cook for about 6 minutes, stirring occasionally.
- Add BBQ sauce and hot honey; cook for 2 more minutes, mixing, then remove chicken.
- Scrape the griddle clean and lower heat to medium-low, add a bit more oil, then lay tortillas flat.
- On one side of each tortilla, layer half the cheese, the cooked chicken, a drizzle of BBQ sauce and hot honey, optional cilantro, and the remaining cheese.
- Fold tortillas over and cook for about 1–2 minutes per side until the cheese melts and the tortillas are crispy.
- Serve immediately with sour cream and jalapeños, if desired.
Notes
For best results, keep the heat medium-low while toasting tortillas to prevent over-browning. Layer cheese on both sides of the filling for better adhesion.
