Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tablespoons blackening seasoning (store-bought or homemade)
- 1 tablespoon olive oil
- 1 cup cooked rice (white or brown)
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup corn (frozen or fresh)
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Toss the shrimp with blackening seasoning until coated.
- Heat olive oil in a skillet over medium-high heat.
- Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side until opaque.
- Layer cooked rice in serving bowls followed by the blackened shrimp.
- Top each bowl with avocado slices, halved cherry tomatoes, and corn.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
For a different twist, substitute shrimp with chicken or tofu, or swap rice for quinoa for added protein.
