Description

A delicious and vibrant blackened salmon dish with a bold spice blend, perfect for weeknight meals or dinner parties.


Ingredients

  • 3 tsp smoked paprika
  • 2 ½ tsp garlic powder
  • 2 ½ tsp onion powder
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • 2 ½ tsp coarse salt
  • 1 ½ tsp black pepper
  • 2 tsp brown sugar
  • ½ tsp cayenne pepper (adjust to taste)
  • 4 skin-on salmon fillets (6-8 oz. each)
  • 2 tbsp unsalted butter
  • 1-2 tbsp canola oil (for cooking)
  • 4 lime wedges (for serving)


Instructions

  1. Prepare the spice mix: In a small bowl, combine smoked paprika, garlic powder, onion powder, thyme, oregano, salt, black pepper, brown sugar, and cayenne. Mix well.
  2. Season the salmon: Pat the salmon fillets dry with paper towels. Generously coat both sides with the spice mix, pressing it in for maximum flavor.
  3. Heat the pan: In a large skillet, heat the canola oil over medium-high heat until shimmering. Reduce the heat slightly if it starts to smoke too much.
  4. Cook the salmon: Add the butter to the pan, swirling it to coat. Place the salmon fillets skin-side down in the skillet. Sear for about 4-5 minutes until the skin is crispy and the flesh starts to cook through. Carefully flip and cook for an additional 3-4 minutes, or until the salmon is cooked to your liking.
  5. Serve: Transfer the salmon to plates and serve with lime wedges for squeezing over the top.

Notes

Allow the seasoned salmon to sit for at least 15 minutes before cooking for better flavor. Use a cast iron skillet for optimal crust.
