Ingredients
- ½ cup sour cream (regular or dairy-free)
- ¼ cup mayo
- 3 tablespoons fresh dill (chopped)
- 1 teaspoon garlic (minced)
- 1 teaspoon lemon juice
- ¼ teaspoon kosher salt
- ⅛ teaspoon ground black pepper
- 4-6 (6oz) salmon fillets, skin-on
- 1 tablespoon paprika
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- ½ teaspoon cayenne pepper
- ¼ teaspoon chipotle pepper
- 1 teaspoon dried oregano leaves
- 1 teaspoon dried thyme leaves
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 3 tablespoons extra virgin olive oil (divided)
Instructions
- Make the Dill Sauce: In a small bowl, mix together sour cream, mayo, dill, garlic, lemon juice, salt, and pepper. Store in the fridge until serving.
- Prep: Preheat your oven to 400°F (200°C). Pat the salmon dry with a paper towel for the best sear.
- Mix Seasoning: Combine spices and herbs in a small bowl. This blend will give your salmon that delightful blackened flavor.
- Season Salmon: Drizzle salmon with olive oil and generously coat with the blackened seasoning on all sides.
- Sear Salmon: Heat oil in a cast iron skillet, then sear salmon skin-side up until beautifully charred.
- Transfer to Oven: Place the skillet directly in the oven and bake until flaky.
- Serve: Once done, enjoy with a dollop of dill sauce.
Notes
For a lighter version, use Greek yogurt instead of sour cream, or swap dill for parsley.
