Ingredients

  • ½ cup sour cream (regular or dairy-free)
  • ¼ cup mayo
  • 3 tablespoons fresh dill (chopped)
  • 1 teaspoon garlic (minced)
  • 1 teaspoon lemon juice
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • 4-6 (6oz) salmon fillets, skin-on
  • 1 tablespoon paprika
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon chipotle pepper
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 3 tablespoons extra virgin olive oil (divided)


Instructions

  1. Make the Dill Sauce: In a small bowl, mix together sour cream, mayo, dill, garlic, lemon juice, salt, and pepper. Store in the fridge until serving.
  2. Prep: Preheat your oven to 400°F (200°C). Pat the salmon dry with a paper towel for the best sear.
  3. Mix Seasoning: Combine spices and herbs in a small bowl. This blend will give your salmon that delightful blackened flavor.
  4. Season Salmon: Drizzle salmon with olive oil and generously coat with the blackened seasoning on all sides.
  5. Sear Salmon: Heat oil in a cast iron skillet, then sear salmon skin-side up until beautifully charred.
  6. Transfer to Oven: Place the skillet directly in the oven and bake until flaky.
  7. Serve: Once done, enjoy with a dollop of dill sauce.

Notes

For a lighter version, use Greek yogurt instead of sour cream, or swap dill for parsley.
