Ingredients
- 1 tablespoon oil
- 4 (6-ounce) pieces salmon
- 4 teaspoons Cajun seasoning
- 2 avocados, diced
- 1/4 cup red onion, diced
- 1 jalapeño, finely diced
- 1 tablespoon cilantro, chopped
- 1 tablespoon lime juice
- Salt to taste
- 1 cup cucumber, diced
- 1/4 cup green onion, diced
- 1 tablespoon parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Heat the oil in a heavy-bottom skillet over medium-high heat.
- Season the salmon fillets generously with Cajun seasoning.
- Place the salmon in the skillet and cook until deeply golden brown to slightly blackened, about 4-5 minutes.
- Carefully flip the salmon and repeat for another 4-5 minutes, until cooked through.
- In a bowl, combine the diced avocado, red onion, jalapeño, cilantro, lime juice, and salt. Mix gently to avoid mashing the avocado.
- For an extra twist, mix diced cucumber, green onion, parsley, lemon juice, and salt for an additional refreshing salsa!
Notes
