Description

Ingredients

  • 1 tablespoon oil
  • 4 (6-ounce) pieces salmon
  • 4 teaspoons Cajun seasoning
  • 2 avocados, diced
  • 1/4 cup red onion, diced
  • 1 jalapeño, finely diced
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon lime juice
  • Salt to taste
  • 1 cup cucumber, diced
  • 1/4 cup green onion, diced
  • 1 tablespoon parsley, chopped
  • 1 tablespoon lemon juice


Instructions

  1. Heat the oil in a heavy-bottom skillet over medium-high heat.
  2. Season the salmon fillets generously with Cajun seasoning.
  3. Place the salmon in the skillet and cook until deeply golden brown to slightly blackened, about 4-5 minutes.
  4. Carefully flip the salmon and repeat for another 4-5 minutes, until cooked through.
  5. In a bowl, combine the diced avocado, red onion, jalapeño, cilantro, lime juice, and salt. Mix gently to avoid mashing the avocado.
  6. For an extra twist, mix diced cucumber, green onion, parsley, lemon juice, and salt for an additional refreshing salsa!

Notes

Serve the salmon hot, topped generously with the avocado salsa. Pair with mixed greens or quinoa for a complete meal.
