Ingredients
- 1 can of sliced pineapple rings (in juice, not syrup)
- 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 tsp vanilla extract
- Maraschino cherries for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the topping: In a skillet, melt the butter over medium heat. Add the brown sugar and stir until dissolved. Arrange the pineapple rings in the mixture and set aside.
- Make the batter: In a separate bowl, combine flour, baking powder, and salt. In another bowl, mix granulated sugar, eggs, and vanilla until light and fluffy. Gradually add the dry ingredients to the wet, mixing until just combined.
- Assemble: Pour the cake batter over the pineapple in the skillet, spreading evenly.
- Bake for about 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Cool slightly: Allow the cake to cool for 10 minutes before inverting onto a serving plate.
Notes
Ensure butter is softened but not melted for a lighter batter. Use room temperature eggs for fluffiness.
