Description

A perfectly juicy and flavorful meatloaf that’s sure to please the whole family, topped with a sweet and tangy glaze.


Ingredients

  • 2 lbs ground beef (85% or 80% lean)
  • 1 medium onion, finely chopped
  • 1 teaspoon olive oil
  • 2 large eggs
  • 3 garlic cloves, minced
  • 2 tablespoons ketchup
  • 3 tablespoons fresh parsley, finely chopped
  • ¾ cup Panko breadcrumbs (or gluten-free breadcrumbs)
  • ⅓ cup milk
  • 1 teaspoon salt, or to taste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon ground black pepper
  • ¾ cup ketchup (for glaze)
  • 1½ teaspoons white vinegar
  • 2 tablespoons brown sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder


Instructions

  1. Line a rimmed baking sheet with parchment paper. Preheat your oven to 350°F (175°C).
  2. In a medium skillet, heat olive oil over medium heat and sauté the chopped onion until softened and golden, about 5-7 minutes.
  3. In a large bowl, combine the sautéed onions and all the meatloaf ingredients. Mix until just combined.
  4. Shape the meat mixture into a loaf on the prepared baking sheet (about 8 inches long, 4 inches wide, and 3 inches tall).
  5. Bake uncovered for 40 minutes at 350°F without the glaze.
  6. While the meatloaf bakes, mix the glaze ingredients in a small bowl until well combined.
  7. After 40 minutes, brush the glaze over the meatloaf and return it to the oven for an additional 20 minutes, or until the internal temperature reaches 160°F (70°C).
  8. Allow the meatloaf to rest for 10-15 minutes before slicing and serving.

Notes

For different flavors, you can replace half of the ground beef with ground turkey or add sautéed vegetables like bell peppers. Don’t skip the resting period to ensure moist slices.
