Description

A vibrant, easy-to-make Italian Orzo Salad, perfect for any occasion.


Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 bell pepper, diced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste


Instructions

  1. Cook the orzo pasta according to the package instructions. Once cooked, drain it and let it cool.
  2. Combine the cooled orzo, cherry tomatoes, diced cucumber, red onion, bell pepper, black olives, feta cheese, and parsley in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, salt, and pepper in a small bowl until well blended.
  4. Pour the dressing over the salad mixture, tossing gently to combine all the flavors.
  5. Serve immediately, or chill in the refrigerator for a more refreshing taste later.

Notes
