Ingredients
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/2 bell pepper, diced
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to the package instructions. Once cooked, drain it and let it cool.
- Combine the cooled orzo, cherry tomatoes, diced cucumber, red onion, bell pepper, black olives, feta cheese, and parsley in a large bowl.
- Whisk together the olive oil, red wine vinegar, salt, and pepper in a small bowl until well blended.
- Pour the dressing over the salad mixture, tossing gently to combine all the flavors.
- Serve immediately, or chill in the refrigerator for a more refreshing taste later.
Notes
Leftover salad can be stored in an airtight container in the refrigerator for up to 3 days. Keep the dressing separate for best texture.
