A flavorful grilled chicken recipe with a bright lemon-garlic marinade that keeps the meat juicy and tender.
Ingredients
- 4 chicken breasts
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
Instructions
- Make the marinade. In a bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, salt, pepper, and oregano until well combined.
- Marinate the chicken. Add chicken breasts and turn to coat thoroughly. Cover and refrigerate for at least 30 minutes (overnight is ideal for deeper flavor).
- Preheat the grill. Heat to medium-high and clean the grates. Lightly oil the grates to prevent sticking.
- Grill. Remove chicken from the marinade and let excess drip off. Grill for 6–7 minutes per side, flipping once.
- Check doneness. Chicken is ready when the thickest part reaches 165°F / 74°C on an instant-read thermometer.
- Rest and serve. Rest the chicken for 5 minutes before slicing. This keeps it noticeably juicier.
Notes
For best flavor, marinate overnight. Keep an eye on the grill temperature to avoid drying out the chicken.
