Ingredients
- 8 oz pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the Pasta: Start by boiling water, adding the pasta, and cooking according to package instructions. Drain and allow it to cool.
- Mix the Salad: In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
- Prepare the Dressing: In a separate small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Combine: Pour the dressing over the pasta salad and toss to combine all the ingredients thoroughly.
- Chill: Place the salad in the refrigerator for at least 30 minutes before serving to enhance the flavors. Enjoy!
Notes
To keep your Greek pasta salad fresh, store it in an airtight container in the refrigerator for up to three days. If freezing, omit feta and olives before freezing.
