A quick and easy creamy coleslaw with a tangy, sweet dressing that pairs perfectly with any meal.
Ingredients
- 1 (14-16 oz) package shredded cabbage (about 5-6 cups) or 6 cups thinly sliced green and/or red cabbage
- 1 (8-10 oz) package shredded carrots (about 2 cups)
- 1 cup mayonnaise (use full-fat for richest texture)
- 2 tablespoons apple cider vinegar (or white wine vinegar)
- 2 tablespoons granulated sugar (or honey/maple syrup)
- 1 teaspoon celery seed
- Salt and freshly ground black pepper, to taste
Instructions
- Shred or buy pre-shredded cabbage and carrots. Pat or briefly salt the cabbage if you want extra crunch.
- Whisk together the mayonnaise-based dressing with vinegar, sugar, celery seed, salt, and pepper.
- Toss the dressing with the vegetables until evenly coated.
- Chill at least 30 minutes to let flavors meld and the cabbage soften slightly.
- Taste and adjust just before serving.
Notes
For a lighter version, you can use Greek yogurt instead of mayonnaise. Add-ins like chopped green onion or grated apple can enhance texture and flavor.
