Description
A refreshing and zesty cilantro lime rice that complements any meal, perfect for family gatherings and summer barbecues.
Ingredients
- 1 cup long-grain white rice (or jasmine rice)
- 2 cups water or low-sodium chicken broth
- 1 tablespoon olive oil or butter
- 1 lime (juiced and zested)
- 1/4 cup fresh cilantro, chopped
- Salt, to taste
Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- Cook the rice: In a medium saucepan, bring 2 cups of water or broth to a boil. Add the rinsed rice and a pinch of salt. Reduce the heat to low, cover, and let it simmer for about 18-20 minutes until fully cooked and the liquid is absorbed.
- Fluff the rice: Once cooked, remove the saucepan from heat. Let it sit, covered, for an additional 5 minutes, then fluff with a fork.
- Add the olive oil or butter, lime juice, lime zest, and chopped cilantro. Mix until well combined.
- Season the rice and serve warm!
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze portions for up to 3 months. Toasting the rice before adding water can enhance flavor.
