Description

A refreshing and zesty cilantro lime rice that complements any meal, perfect for family gatherings and summer barbecues.


Ingredients

  • 1 cup long-grain white rice (or jasmine rice)
  • 2 cups water or low-sodium chicken broth
  • 1 tablespoon olive oil or butter
  • 1 lime (juiced and zested)
  • 1/4 cup fresh cilantro, chopped
  • Salt, to taste


Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Cook the rice: In a medium saucepan, bring 2 cups of water or broth to a boil. Add the rinsed rice and a pinch of salt. Reduce the heat to low, cover, and let it simmer for about 18-20 minutes until fully cooked and the liquid is absorbed.
  3. Fluff the rice: Once cooked, remove the saucepan from heat. Let it sit, covered, for an additional 5 minutes, then fluff with a fork.
  4. Add the olive oil or butter, lime juice, lime zest, and chopped cilantro. Mix until well combined.
  5. Season the rice and serve warm!

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze portions for up to 3 months. Toasting the rice before adding water can enhance flavor.
