Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 8 corn tortillas
  • 2 cups enchilada sauce (homemade or store-bought)
  • 1 onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a skillet over medium heat and sauté the diced onion until it’s translucent.
  3. Add the shredded chicken, garlic powder, cumin, salt, and pepper to the onion, stirring well to combine.
  4. To assemble, dip each tortilla in salsa, fill it with the chicken mixture, and sprinkle a little cheese on top. Then, roll the tortilla tightly and place it seam-side down in a baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  6. Bake for 20 to 25 minutes, or until heated through and the cheese is bubbly.
  7. Garnish with fresh cilantro before serving.

Notes

For extra flavor, consider marinating your chicken in lime juice and spices before cooking. To prevent cracking, warm the tortillas slightly before filling.
