Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 8 corn tortillas
- 2 cups enchilada sauce (homemade or store-bought)
- 1 onion, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a skillet over medium heat and sauté the diced onion until it’s translucent.
- Add the shredded chicken, garlic powder, cumin, salt, and pepper to the onion, stirring well to combine.
- To assemble, dip each tortilla in salsa, fill it with the chicken mixture, and sprinkle a little cheese on top. Then, roll the tortilla tightly and place it seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake for 20 to 25 minutes, or until heated through and the cheese is bubbly.
- Garnish with fresh cilantro before serving.
Notes
For extra flavor, consider marinating your chicken in lime juice and spices before cooking. To prevent cracking, warm the tortillas slightly before filling.
