Ingredients
- 2 cups cooked chicken (shredded)
- 1 cup cheese (shredded, such as cheddar or Monterey Jack)
- 1 can (10 oz) red enchilada sauce
- 8 corn tortillas
- 1/2 cup onion (diced)
- 1 tablespoon olive oil
- Salt and pepper (to taste)
- Sour cream and cilantro (for serving, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Sauté the diced onion until it becomes translucent.
- Mix the shredded chicken, half of the cheese, the sautéed onions, and season generously with salt and pepper.
- On each tortilla, spread a layer of enchilada sauce. Add a scoop of the chicken mixture and roll it up tightly.
- Arrange the rolled enchiladas seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden.
- Serve hot with sour cream and cilantro if desired.
Notes
For added flavor, try roasting the tortillas lightly before filling them, and consider adding black beans or corn to the chicken mix.
