Ingredients
- 4 cups fresh broccoli florets
- 1 cup diced red bell pepper
- 1 cup shredded carrots
- 1/2 cup chopped red onion
- 1/2 cup raisins or dried cranberries
- 1/2 cup sunflower seeds or chopped nuts (optional)
- 1 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 2 tablespoons sugar (adjustable to taste)
- Salt and pepper to taste
Instructions
- Wash and chop the broccoli into small, bite-sized florets.
- Dice the red bell pepper, shred the carrots, and finely chop the red onion.
- In a large mixing bowl, combine the broccoli, red bell pepper, carrots, red onion, raisins, and sunflower seeds if using.
- In a separate smaller bowl, whisk together the mayonnaise, apple cider vinegar, and sugar until smooth.
- Pour the dressing over the broccoli mixture and gently toss until all ingredients are evenly coated.
- Add salt and pepper to taste, adjusting for preference.
- Cover and refrigerate for at least 30 minutes before serving.
- Once chilled, give the salad a quick toss and serve fresh.
Notes
For a lighter version, substitute mayonnaise with Greek yogurt. Adjust dressing sweetness to taste.
