Description

Creamy and decadent cheesecake bars with vibrant swirls of blueberry sauce, perfect for summer gatherings.


Ingredients

  • 2 cups Fresh Blueberries
  • 2 tsp Cornstarch
  • 1 tbsp Lemon Juice
  • 1 tsp Vanilla Extract
  • 1/4 cup Granulated Sugar (for sauce)
  • 14 Graham Crackers (crushed)
  • 6 tbsp Unsalted Butter (melted)
  • 2 packages (8 oz each) Cream Cheese (softened)
  • 1/2 cup Granulated Sugar (for filling)
  • 2 Large Eggs (room temperature)
  • 1 tsp Vanilla Extract (for filling)
  • 1 tbsp Lemon Juice (for filling)
  • 3 tbsp All-Purpose Flour


Instructions

  1. Prepare the blueberry sauce by combining blueberries, sugar, cornstarch, lemon juice, and vanilla extract in a saucepan. Cook until thickened.
  2. Preheat your oven to 350°F (175°C).
  3. Mix the crushed graham crackers with melted butter, and press into a parchment-lined baking pan. Bake for 10 minutes.
  4. Beat the softened cream cheese with 1/2 cup sugar until creamy. Add eggs one at a time, followed by vanilla, lemon juice, and flour.
  5. Spread the cheesecake filling over the crust, swirling in spoonfuls of blueberry sauce. Bake for 35-40 minutes until set but jiggly.
  6. Cool at room temperature, then chill in the refrigerator for at least 4 hours before serving.

Notes

Add whipped cream or fresh mint for garnish. Bars can be stored in the refrigerator for up to one week.
