Description

A warm berry cobbler pie filled with a delightful mixture of seasonal berries and topped with a fluffy batter, perfect for family gatherings.


Ingredients

  • 2 cups mixed berries (strawberries, blueberries, raspberries, or blackberries)
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 tablespoon cornstarch (optional for thicker filling)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the mixed berries, sugar, vanilla extract, and lemon juice in a mixing bowl. Let this mixture sit for about 10 minutes.
  3. Whisk together the flour, baking powder, and salt in another bowl.
  4. Stir in the melted butter and milk to the dry ingredients until just combined.
  5. Pour half of the batter into a greased 9-inch pie pan.
  6. Layer the berry mixture evenly over the batter.
  7. Pour the remaining batter over the top.
  8. Bake for 40-45 minutes, or until the top is golden brown.
  9. Allow to cool for a few minutes before serving.
