Ingredients
- 2 cups mixed berries (strawberries, blueberries, raspberries, or blackberries)
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 1 tablespoon cornstarch (optional for thicker filling)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the mixed berries, sugar, vanilla extract, and lemon juice in a mixing bowl. Let this mixture sit for about 10 minutes.
- Whisk together the flour, baking powder, and salt in another bowl.
- Stir in the melted butter and milk to the dry ingredients until just combined.
- Pour half of the batter into a greased 9-inch pie pan.
- Layer the berry mixture evenly over the batter.
- Pour the remaining batter over the top.
- Bake for 40-45 minutes, or until the top is golden brown.
- Allow to cool for a few minutes before serving.
