Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 medium potatoes, peeled and cubed
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat. Add the beef cubes, browning them on all sides.
- Once browned, toss in the chopped onion and minced garlic. Sauté until the onion turns translucent.
- Stir in the tomato paste, Worcestershire sauce, thyme, and season with salt and pepper.
- Pour the beef broth into the pot and bring the mixture to a gentle boil.
- Reduce the heat to low, cover, and let it simmer for about 90 to 120 minutes.
- Add in the cubed potatoes and sliced carrots, cooking for an additional hour or until the vegetables are fork-tender.
- Before serving, taste and adjust the seasoning if needed.
Notes
Serve with crusty bread or a side salad for a complete meal. Garnish with fresh parsley if desired.
