Description

Crispy, baked beef and cheese chimichangas filled with warmly spiced ground beef, refried beans, and gooey cheese, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb ground beef (80/20)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • ½ cup salsa
  • 1 cup refried beans
  • 1 ½ cups shredded cheddar cheese
  • 6 large flour tortillas
  • 2 tbsp vegetable oil


Instructions

  1. Heat a large skillet over medium heat.
  2. Add the ground beef and diced onion. Cook until browned and the onion is soft.
  3. Drain excess grease.
  4. Stir in the garlic and cook for 30 seconds.
  5. Add taco seasoning and salsa. Stir well and simmer for 3–4 minutes.
  6. Let the filling cool for 5 minutes.
  7. Lay out tortillas on a clean surface.
  8. Spread a spoonful of refried beans down the center of each tortilla.
  9. Add a scoop of beef mixture.
  10. Sprinkle with shredded cheese.
  11. Fold in the sides and roll up tightly.
  12. Preheat oven to 400°F (200°C).
  13. Place chimichangas seam-side down on a baking sheet.
  14. Brush lightly with vegetable oil.
  15. Bake for 18–20 minutes until golden and crisp.
  16. Let them rest for 2 minutes before serving.

Notes

Serve with your favorite toppings like sour cream and salsa. You can freeze chimichangas for up to 2–3 months.
