Description
Crispy, baked beef and cheese chimichangas filled with warmly spiced ground beef, refried beans, and gooey cheese, perfect for a quick weeknight dinner.
Ingredients
- 1 lb ground beef (80/20)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning
- ½ cup salsa
- 1 cup refried beans
- 1 ½ cups shredded cheddar cheese
- 6 large flour tortillas
- 2 tbsp vegetable oil
Instructions
- Heat a large skillet over medium heat.
- Add the ground beef and diced onion. Cook until browned and the onion is soft.
- Drain excess grease.
- Stir in the garlic and cook for 30 seconds.
- Add taco seasoning and salsa. Stir well and simmer for 3–4 minutes.
- Let the filling cool for 5 minutes.
- Lay out tortillas on a clean surface.
- Spread a spoonful of refried beans down the center of each tortilla.
- Add a scoop of beef mixture.
- Sprinkle with shredded cheese.
- Fold in the sides and roll up tightly.
- Preheat oven to 400°F (200°C).
- Place chimichangas seam-side down on a baking sheet.
- Brush lightly with vegetable oil.
- Bake for 18–20 minutes until golden and crisp.
- Let them rest for 2 minutes before serving.
Notes
Serve with your favorite toppings like sour cream and salsa. You can freeze chimichangas for up to 2–3 months.
