Description

A vibrant bowl brimming with BBQ goodness and fresh crunch, featuring quinoa and chickpeas wrapped in zesty ranch and BBQ sauce.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cooked quinoa
  • 1 cup fire-roasted corn
  • 1/2 cup pickled red onions
  • 1 cup sharp cheddar, shredded
  • 1/2 cup yogurt
  • 1/4 cup ranch dressing
  • 1/4 cup BBQ sauce
  • Salt and pepper to taste


Instructions

  1. Combine the drained chickpeas and BBQ sauce until they’re well-coated. Transfer the chickpeas to a baking sheet and roast them in the oven at 400°F (200°C) for 20 minutes.
  2. Prepare your serving bowls. Start with a generous layer of cooked quinoa as the base.
  3. Add the roasted chickpeas along with fire-roasted corn, pickled red onions, and a sprinkle of shredded cheddar.
  4. Mix together yogurt and ranch dressing, and drizzle this over the topped bowls.
  5. Season with salt and pepper to taste. Serve immediately and enjoy every hearty bite!
