Ingredients
- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large flour tortillas
- 1 tablespoon olive oil
Instructions
- Mix the shredded chicken with BBQ sauce until well coated.
- Heat a large skillet over medium heat and add a tablespoon of olive oil.
- Place one tortilla in the skillet, then layer with BBQ chicken and sprinkle cheese on top.
- Top with another tortilla and cook until the bottom is golden brown, about 3-4 minutes.
- Carefully flip the quesadilla and cook the other side until golden and the cheese is melted.
- Remove from the skillet, slice, and serve with your choice of toppings.
