Ingredients
- 8 ounces pasta (penne or fusilli)
- 1 cup fresh basil, chopped
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/4 cup lemon juice, freshly squeezed
- 1/4 cup olive oil
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Grated Parmesan cheese, optional, for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to boil. Add the pasta and cook according to package directions until al dente. Drain and rinse under cold water to cool.
- Make the Dressing: In a small bowl, whisk together lemon juice, olive oil, and minced garlic. Season with salt and pepper.
- Combine Ingredients: In a large bowl, toss the cooled pasta with cherry tomatoes, cucumber, and basil. Pour the dressing over the salad and mix until well combined.
- Chill: Cover the salad and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
