Ingredients

  • 8 ounces pasta (penne or fusilli)
  • 1 cup fresh basil, chopped
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 cup lemon juice, freshly squeezed
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Grated Parmesan cheese, optional, for garnish


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to boil. Add the pasta and cook according to package directions until al dente. Drain and rinse under cold water to cool.
  2. Make the Dressing: In a small bowl, whisk together lemon juice, olive oil, and minced garlic. Season with salt and pepper.
  3. Combine Ingredients: In a large bowl, toss the cooled pasta with cherry tomatoes, cucumber, and basil. Pour the dressing over the salad and mix until well combined.
