Description

A quick and easy vinaigrette that elevates any salad or dish in under five minutes.


Ingredients

  • 1/4 cup lemon juice or vinegar
  • 1/2 cup extra-virgin olive oil
  • 12 teaspoons honey or maple syrup (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh herbs, chopped (optional)


Instructions

  1. Add lemon juice or chosen vinegar to a small bowl or jar.
  2. Sprinkle in salt and pepper. Add honey and Dijon mustard if using.
  3. Whisk the acid mixture briefly to dissolve salt.
  4. Drizzle in olive oil while whisking continuously.
  5. Taste and adjust seasoning if needed.
  6. Stir in fresh chopped herbs, if using.
  7. Transfer to a clean jar and refrigerate.

Notes

Best used within one week. Shake or whisk before serving if separation occurs.
