Ingredients

  • 1 lb jumbo shrimp, peeled and deveined
  • 1 cup buttermilk
  • ¾ cup cornstarch
  • 1 cup neutral oil for frying
  • ¾ teaspoon salt
  • ¾ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 green onion, finely chopped for garnish (optional)
  • ½ cup Japanese mayonnaise
  • ¼ cup sweet Thai chili sauce
  • 2 tablespoons sriracha

Instructions

  1. Tenderize the shrimp in buttermilk for 10 minutes.
  2. Mix the sauce ingredients in a small bowl until smooth.
  3. Prepare the coating by mixing cornstarch, salt, garlic powder, and black pepper in a shallow bowl.
  4. Dredge each shrimp in the cornstarch mixture, ensuring no bare spots.
  5. Heat oil in a skillet to 350°F.
  6. Fry shrimp in small batches for about 1.5 minutes per side until golden brown.
  7. Drain fried shrimp on a wire rack or paper towels.

Notes

Fresh shrimp yields the best texture. For a spicier version, adjust the sriracha to taste.
