Ingredients
- 1 lb jumbo shrimp, peeled and deveined
- 1 cup buttermilk
- ¾ cup cornstarch
- 1 cup neutral oil for frying
- ¾ teaspoon salt
- ¾ teaspoon garlic powder
- ½ teaspoon black pepper
- 1 green onion, finely chopped for garnish (optional)
- ½ cup Japanese mayonnaise
- ¼ cup sweet Thai chili sauce
- 2 tablespoons sriracha
Instructions
- Tenderize the shrimp in buttermilk for 10 minutes.
- Mix the sauce ingredients in a small bowl until smooth.
- Prepare the coating by mixing cornstarch, salt, garlic powder, and black pepper in a shallow bowl.
- Dredge each shrimp in the cornstarch mixture, ensuring no bare spots.
- Heat oil in a skillet to 350°F.
- Fry shrimp in small batches for about 1.5 minutes per side until golden brown.
- Drain fried shrimp on a wire rack or paper towels.
- Toss the crispy shrimp with the sauce and garnish with chopped green onions.
Notes
Fresh shrimp yields the best texture. For a spicier version, adjust the sriracha to taste.
