Description

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup mayonnaise (for sauce)
  • 2 tablespoons sriracha (for sauce)
  • 1 tablespoon honey (for sauce)
  • 1 teaspoon garlic powder (for sauce)
  • 1 teaspoon lime juice (for sauce)


Instructions

  1. Cook Rice: Begin by cooking your rice according to the package instructions. Once it’s fluffy, set it aside.
  2. Prepare Chicken: Cut the chicken breast into bite-sized pieces and season with salt and pepper.
  3. Sauté Chicken: Over medium-high heat, add olive oil to a large skillet. Once hot, toss in the chicken pieces and cook until golden brown, about 6-8 minutes.
  4. Mix Sauce: In a small bowl, combine mayonnaise, sriracha, honey, garlic powder, and lime juice. Taste and adjust the heat level to your liking.
  5. Add Veggies: Once the chicken is cooked through, add your mixed vegetables to the skillet. Stir and cook for an additional 2-3 minutes until they’re tender.
  6. Combine: Remove the skillet from heat, pour the sauce over the chicken and vegetables, and stir well to coat everything evenly. Serve over a bed of rice.

Notes

For a beautiful presentation, serve in deep dishes with chopped green onions or additional sriracha on top. Store leftovers in an airtight container for up to three days.
