Description

Delicious banana pudding cupcakes that combine soft cake, silky pudding, and crunchy vanilla wafers into an easy-to-eat dessert.


Ingredients

  • 1 cup whole milk
  • 6 egg whites, room temperature
  • 1 tsp vanilla extract
  • 4 tsp baking powder
  • 1 3/4 cup granulated sugar
  • 2 1/4 cup all-purpose flour
  • 3/4 cup unsalted butter, softened
  • 1 banana, mashed
  • 24 vanilla wafers
  • 2 (3.4 oz) boxes instant banana pudding mix
  • 4 cups cold milk
  • 2 bananas, diced
  • 1 cup cold heavy whipping cream
  • 1/2 tsp vanilla
  • 2 TBS sugar


Instructions

  1. Preheat oven to 350°F (175°C) and prepare muffin tins.
  2. Whisk together flour and baking powder; set aside.
  3. Cream butter and sugar until light and fluffy.
  4. Add egg whites one at a time, beating briefly after each.
  5. Mix in vanilla and mashed banana.
  6. Alternate adding dry ingredients and milk to the mixture.
  7. Divide batter into cupcake liners.
  8. Bake for 18-22 minutes until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack.
  10. Whisk together pudding mix and cold milk; refrigerate to set.
  11. Chill mixing bowl and beaters; whip cream with sugar and vanilla until soft peaks form.
  12. Assemble cupcakes with pudding and whipped cream on top. Add diced bananas and crushed wafers.

Notes

For stability, replace sugar in whipped cream with unflavored gelatin or use powdered sugar.
