Description

Fluffy, nutritious pancakes made with ripe bananas and rolled oats – perfect for breakfast or brunch.


Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 2 eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Blend the bananas, rolled oats, eggs, milk, baking powder, vanilla extract, and salt until smooth.
  2. Preheat a non-stick skillet over medium heat.
  3. Pour about 1/4 cup of batter for each pancake onto the skillet.
  4. Cook until small bubbles form on the surface, then flip and cook until golden brown.
