A healthy twist on a classic breakfast, these Banana Oatmeal Pancakes are quick to prepare and packed with flavor.
Ingredients
- 2 ripe bananas
- 1 cup rolled oats
- 2 eggs
- 1/2 cup milk (dairy or non-dairy)
- 1 tsp baking powder
- 1/2 tsp cinnamon (optional)
- A pinch of salt
- Oil or butter for cooking
Instructions
- Combine the ripe bananas, rolled oats, eggs, milk, baking powder, cinnamon, and salt in a blender. Blend until the mixture is smooth.
- Preheat a non-stick skillet over medium heat. Add a small amount of oil or butter.
- Use about 1/4 cup of the batter for each pancake and pour it onto the heated skillet.
- Cook until you see bubbles forming on the surface, then carefully flip the pancake and cook until both sides are golden brown.
- Serve warm with your choice of toppings.
Notes
Use overripe bananas for extra sweetness and a smooth texture. Feel free to experiment with different toppings.
