Description

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 2 eggs
  • 1/2 cup milk (or non-dairy alternative)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. In a blender, combine the ripe bananas, rolled oats, eggs, milk, baking powder, vanilla extract, and salt. Blend until the mixture is smooth and homogeneous.
  2. Heat a non-stick skillet over medium heat.
  3. Pour the batter onto the skillet in your preferred pancake size.
  4. Cook each pancake for about 2-3 minutes on one side, or until bubbles start to form on the top, then flip to cook for an additional 2-3 minutes until golden brown.
  5. Serve warm, topped with fresh fruit, nuts, syrup, or almond butter.

Notes

Make sure your bananas are very ripe for sweeter pancakes. For fluffier pancakes, let the batter rest for a few minutes before cooking.
