Description

Soft, chewy banana oatmeal bars made with just four wholesome ingredients, perfect for breakfast, snacks, or guilt-free desserts.


Ingredients

  • 3 large ripe bananas (about 1 ½ cups mashed)
  • ½ cup creamy almond butter (or peanut butter)
  • 2 cups rolled oats (use certified gluten-free if needed)
  • 1 cup chocolate chips (dairy-free for vegan option)
  • 1 teaspoon pure vanilla extract (optional)
  • ¼ teaspoon sea salt (optional)
  • 1 teaspoon ground cinnamon (optional)
  • ⅔ cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat your oven to 350°F and line a 9-inch square baking pan with parchment paper.
  2. Mash the bananas in a mixing bowl until smooth and creamy.
  3. Incorporate the almond butter until completely mixed with the banana.
  4. Add the rolled oats and chocolate chips, stirring until evenly combined.
  5. Spread the mixture into the prepared pan using a spatula.
  6. Bake for 18 to 25 minutes until edges are golden-brown and center is set.
  7. Allow the bars to cool completely in the pan before slicing.

Notes

Use very ripe bananas for maximum sweetness. The cooled bars can be stored at room temperature for 2 days or refrigerated for up to a week.
