Description

A delightful salad featuring tender steak, creamy gorgonzola, sweet grilled corn, and bright balsamic vinaigrette, perfect for any occasion.

Ingredients

  • 1 lb steak (flank or sirloin)
  • 4 oz gorgonzola cheese, crumbled
  • 2 ears of fresh grilled corn
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • Gremolata (optional, for garnish)
  • 1/4 cup balsamic vinaigrette
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your grill to medium-high heat. Season the steak generously with salt and pepper.
  2. Place the steak on the grill, cooking until it reaches your desired doneness (about 4-6 minutes per side for medium-rare). Let the steak rest for 5-10 minutes before slicing.
  3. Grill the corn until it’s charred all around, usually about 10-15 minutes. Once done, let it cool slightly, then cut the kernels off the cob.
  4. In a large bowl, combine the sliced steak, corn, halved cherry tomatoes, and red onion.
  5. Add the gorgonzola cheese and drizzle with balsamic vinaigrette. If you’re using gremolata, sprinkle that on as well.
  6. Toss everything gently to combine, ensuring the vinaigrette coats all ingredients. Serve immediately and enjoy!

Notes

For a vegetarian option, swap steak for grilled shrimp or portobello mushrooms. You can also use feta or goat cheese instead of gorgonzola.
