A delightful salad featuring tender steak, creamy gorgonzola, sweet grilled corn, and bright balsamic vinaigrette, perfect for any occasion.
Ingredients
- 1 lb steak (flank or sirloin)
- 4 oz gorgonzola cheese, crumbled
- 2 ears of fresh grilled corn
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- Gremolata (optional, for garnish)
- 1/4 cup balsamic vinaigrette
- Salt to taste
- Pepper to taste
Instructions
- Preheat your grill to medium-high heat. Season the steak generously with salt and pepper.
- Place the steak on the grill, cooking until it reaches your desired doneness (about 4-6 minutes per side for medium-rare). Let the steak rest for 5-10 minutes before slicing.
- Grill the corn until it’s charred all around, usually about 10-15 minutes. Once done, let it cool slightly, then cut the kernels off the cob.
- In a large bowl, combine the sliced steak, corn, halved cherry tomatoes, and red onion.
- Add the gorgonzola cheese and drizzle with balsamic vinaigrette. If you’re using gremolata, sprinkle that on as well.
- Toss everything gently to combine, ensuring the vinaigrette coats all ingredients. Serve immediately and enjoy!
Notes
For a vegetarian option, swap steak for grilled shrimp or portobello mushrooms. You can also use feta or goat cheese instead of gorgonzola.
