Balsamic Grilled Zucchini with Parmesan

Description

Grilled zucchini drizzled with balsamic glaze and topped with freshly grated Parmesan; a perfect summer side dish.


Ingredients

  • 2 medium zucchinis
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • ½ cup grated Parmesan cheese
  • Fresh basil for garnish (optional)


Instructions

  1. Wash the zucchinis and slice them into thick rounds, about ½ inch thick.
  2. Whisk together balsamic vinegar, olive oil, garlic powder, salt, and pepper in a large bowl.
  3. Add the zucchini slices to the bowl and toss to coat evenly. Let them marinate for at least 15 minutes.
  4. Preheat your grill to medium heat.
  5. Place the marinated zucchini directly onto the grill, cooking for about 3-4 minutes on each side.
  6. Remove the zucchini from the grill and sprinkle with grated Parmesan while still hot.
  7. Garnish with fresh basil before serving, if desired.

Notes

For a different flavor, try yellow squash or feta cheese. Store leftovers in an airtight container for 3-4 days.
