Description
Grilled zucchini drizzled with balsamic glaze and topped with freshly grated Parmesan; a perfect summer side dish.
Ingredients
- 2 medium zucchinis
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- ½ cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- Wash the zucchinis and slice them into thick rounds, about ½ inch thick.
- Whisk together balsamic vinegar, olive oil, garlic powder, salt, and pepper in a large bowl.
- Add the zucchini slices to the bowl and toss to coat evenly. Let them marinate for at least 15 minutes.
- Preheat your grill to medium heat.
- Place the marinated zucchini directly onto the grill, cooking for about 3-4 minutes on each side.
- Remove the zucchini from the grill and sprinkle with grated Parmesan while still hot.
- Garnish with fresh basil before serving, if desired.
Notes
For a different flavor, try yellow squash or feta cheese. Store leftovers in an airtight container for 3-4 days.
