Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups frozen mixed berries
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- Mix together the melted butter, milk, eggs, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry mixture. Stir until just combined—don’t overmix!
- Fold in the frozen mixed berries, ensuring they are evenly distributed.
- Divide the batter evenly among the muffin cups, filling them about 3/4 full.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before transferring the muffins to a wire rack.
