Ingredients
- 8 small corn tortillas
- 1 lb ground beef
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 1 cup shredded lettuce
- 1 medium tomato, diced
- ½ cup sour cream
- ½ cup sliced olives (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cook the beef: Place a skillet over medium heat. Add ground beef and cook until no longer pink.
- Season it: Stir in taco seasoning and simmer briefly.
- Assemble: Spoon beef into each corn tortilla and add shredded cheese on top.
- Bake: Arrange tortillas in a baking dish and bake for 15–20 minutes until crispy.
- Top and serve with lettuce, tomato, sour cream, and olives.
Notes
Don’t overfill to maintain crispiness. Drain excess fat from beef.
