Description

A quick and flavorful dish featuring flaky cod fillets topped with a crispy Parmesan crust, perfect for any occasion.


Ingredients

  • 2 (4-5 oz) cod fillets
  • 2 tbsp salted butter, melted
  • 1/3 cup Panko breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1 tsp garlic powder
  • 1 tsp lemon zest
  • Olive oil or cooking spray
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium mixing bowl, combine Panko breadcrumbs, grated Parmesan cheese, chopped parsley, garlic powder, lemon zest, salt, and pepper. Mix well.
  3. Place the cod fillets in a small baking dish. Pour the melted butter over each fillet, ensuring they’re well coated.
  4. Gently dip the butter-coated fillets into the breadcrumb mixture, pressing down to make sure the mixture adheres well to all sides.
  5. Return the crusted fillets to the baking dish.
  6. For an extra crispy crust, drizzle olive oil over the top or spray with cooking spray.
  7. Bake in the preheated oven for 10-12 minutes. For a beautiful golden crust, broil on high for an additional 2 minutes.
  8. Serve warm with fresh lemon wedges.

Notes

Make sure to pat the cod fillets dry before applying the butter and breadcrumb mixture. Don’t skip the broiling step for a crispy crust.
