A quick and flavorful dish featuring flaky cod fillets topped with a crispy Parmesan crust, perfect for any occasion.
Ingredients
- 2 (4-5 oz) cod fillets
- 2 tbsp salted butter, melted
- 1/3 cup Panko breadcrumbs
- 1/3 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley
- 1 tsp garlic powder
- 1 tsp lemon zest
- Olive oil or cooking spray
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a medium mixing bowl, combine Panko breadcrumbs, grated Parmesan cheese, chopped parsley, garlic powder, lemon zest, salt, and pepper. Mix well.
- Place the cod fillets in a small baking dish. Pour the melted butter over each fillet, ensuring they’re well coated.
- Gently dip the butter-coated fillets into the breadcrumb mixture, pressing down to make sure the mixture adheres well to all sides.
- Return the crusted fillets to the baking dish.
- For an extra crispy crust, drizzle olive oil over the top or spray with cooking spray.
- Bake in the preheated oven for 10-12 minutes. For a beautiful golden crust, broil on high for an additional 2 minutes.
- Serve warm with fresh lemon wedges.
Notes
Make sure to pat the cod fillets dry before applying the butter and breadcrumb mixture. Don’t skip the broiling step for a crispy crust.
