Ingredients

  • 4 cod fillets
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Add the chopped onion, garlic, and ginger; sauté until the onion is soft and translucent.
  3. Stir in the curry powder and let the flavors meld for an additional minute.
  4. Pour in the coconut milk, stirring to combine and bring to a gentle simmer.
  5. Season the cod fillets with salt and pepper and arrange them in a baking dish. Pour the coconut curry sauce over the cod.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
