Ingredients

  • 4 cod fillets
  • 1 can coconut milk
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or cilantro) for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add the coconut milk and lemon juice, stirring to combine seamlessly.
  4. Season the sauce with salt and pepper to elevate the flavors.
  5. Place the cod fillets in a baking dish and pour the coconut lemon cream sauce over them.
  6. Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.

Notes
